Malva Pudding with Amarula Chantilly sauce

Malva pudding, also called malvapoeding or marshmallow pudding, is a traditional South African dessert. Since South African restaurants are a rarity overseas, you probably haven’t come across malva pudding until now. It is a sweet pudding recipe with a yellow sponge drenched in a decadent sauce. Generally, it also contains apricot jam, which is a classic ingredient in South African cuisine. As a finishing touch, it’s topped with either vanilla custard or fresh cream. 

Ingredients 

1. 1 cup flour

2. 1 large free range whole egg

3. 1/2 cup castor sugar

4. 1/2 cup milk

5. 3 tbs salted butter

6. 1 tbs apricot jam

7. 1 tsp bicarbonate of soda

8. 1 tsp fine salt

9. 1 tbs white vinegar

10. 4 1/2 oz salted butter

11. 3/4 cup castor sugar

12. 1/4 cup water

13. 3/4 cup cream

14. 1 tsp vanilla essence

15. 1 cup milk

16. 1 cup Amarula cream liqueur

17. 4 free range egg yolks

18. 5 tbs castor sugar

19. 1 vanilla pod
